Gigantes Plaki
Serves 4
Ingredients
1. 1 onionÂ
2. 2 cloves of garlicÂ
3. A splash of oilÂ
4. A pinch of cinnamonÂ
5. 1 x 400g carton or tin of chopped tomatoesÂ
6. 1/4 bunch of fresh basilÂ
7. A splash of lemon juice from a tin of chopped lemonÂ
8. 1 x400 tin of butter beansÂ
9. 1 vegetable stock cubeÂ
10. 75g of Greek cheese
Method
1. Finely chop the onion and garlic, and put in a pan, along with the oil and the cinnamon.Â
2. Cook on a low heat until the onion is softened, then add chopped tomatoes and continue to simmer for a few minutes.
3. Chop the basil stalks, and add them with the lemon juice to the pan, whilst it continues to simmer.
4. Stir in the butter beans and add the vegetable stock with a small amount of water if necessary. Stir well until it’s dissolved. Leave to simmer for 20 minutes, then serve!

Gigantes plaki can be eaten cold so leftover can be mixed with rice to create another lunch
