Gigantes Plaki

Serves 4

Gigantes Plaki: Image

Ingredients

1. 1 onion 
2. 2 cloves of garlic 
3. A splash of oil 
4. A pinch of cinnamon 
5. 1 x 400g carton or tin of chopped tomatoes 
6. 1/4 bunch of fresh basil 
7. A splash of lemon juice from a tin of chopped lemon 
8. 1 x400 tin of butter beans 
9. 1 vegetable stock cube 
10. 75g of Greek cheese

Method

1. Finely chop the onion and garlic, and put in a pan, along with the oil and the cinnamon. 
2. Cook on a low heat until the onion is softened, then add chopped tomatoes and continue to simmer for a few minutes.
3. Chop the basil stalks, and add them with the lemon juice to the pan, whilst it continues to simmer.
4. Stir in the butter beans and add the vegetable stock with a small amount of water if necessary. Stir well until it’s dissolved. Leave to simmer for 20 minutes, then serve!
