Mexican Protein & Rice
Serves 4
Ingredients
1. 1 pepper
2. 1 onion
3. Handful of mushroomsÂ
4. Small sweetcorn tin
5. Black beansÂ
6 . Teaspoon dried garlicÂ
7. 1/2 teaspoon dried chilliÂ
8. 200g veggie pieces of your choiceÂ
9. OilÂ
10. 225g riceÂ
11. 1/2 teaspoon dried corianderÂ
12. Hot sauce if desired
Method
1. Slice the onion, pepper and mushrooms into small stripsÂ
2. Drain the black beans and rinse with fresh water
3. Drain sweetcorn and keep with black beans
4. Rinse rice in sieve with cold water until water is clearÂ
5. Add rice to saucepan and add 550ml water and turn on heatÂ
6. Add the veggie pieces to a bowl and add a tablespoon of oil, the garlic and chilliÂ
7. Add a splash of oil to the pan and fry the protein pieces onion and pepperÂ
8. Once the protein and veggies go softer add the mushroomÂ
9. Once rice has boiled cook for further ten minutesÂ
10. When everything is browned add the beans and sweetcorn and fry for a further 3-4 minutesÂ
11. Drain rice and add dried corianderÂ
12. Serve and enjoy!
Tasty Tip
1. Add hot sauce for flavour
2. Put contents into a wrap and make into a burrito
